Thai Style Pork and Coriander Dumplings

Ingredients
- 400g Pork Mince (Heart Smart)
- 1 stalk lemongrass, crushed & finely sliced
- 1 small red chilli, finely chopped
- 1 clove garlic, finely chopped
- 1 tbsp brown sugar
- 4 tbsp fish sauce
- 4 tbsp lime juice
- 1/2 red cabbage, chopped
- 1/2 cup coriander leaves, chopped
- 32 wonton wrappers
Method
- Use a mortar & pestle to grind lemongrass, chilli & garlic to a paste. Add fish sauce, lime juice & brown sugar to paste and stir well.
- In a bowl, combine mixture with pork mince. Add coriander & cabbage and fold through.
- Place 1 teaspoon mixture into centre of 1 wonton wrapper. Brush edges with water. Fold wonton over to make a triangle & press down to seal.
- Concertina-fold the edges.
- Line base of a steamer basket with baking paper. Place dumplings, in a single layer, in basket. Pour a litre of water into a pot or wok & bring to the boil over high heat. Place steamer over pot or wok, ensuring base doesn’t touch water.
- Steam dumplings for 15 to 20 minutes or until tender and cooked through.
- Serve with soy sauce.
