Sticky Hoisin Chicken
Sticky, delicious chicken breast, served with a crispy green vege salad. The perfect Asian dish for Autumn.

Ingredients
- 400g chicken breast
- 2 tbsp hoisin sauce
- 1 tbsp honey
- 1 1/2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice wine vinegar
- 250g brocollini, halved lengthways
- 200g sugar snap peas, trimmed
- 200g green beans, trimmed and halved lengthways
- 1 pear, cored and sliced
- 50g dry roasted cashew nuts
Method
- Portion the chicken into 4 x 100g fillets and pound down to an even thickness.
- Combine the hoisin sauce, honey, 1 tbsp of the soy sauce and 1/2 tbsp of the sesame oil to make a marinade. Marinate the chicken for 5-10 minutes while you prepare the greens.
- Place the broccolini, beans and sugar snap peas into a heatproof dish. Pour over boiling water and allow to stand for 2-3 minutes. Drain, refresh and stir through the pear and cashew nuts.
- Combine rice wine vinegar with the remaining soy and sesame oil. Stir well and pour over the salad.
- Spray a non-stick pan lightly with cooking oil and heat over medium-high heat. Fry the chicken fillets for 3-4 minutes on each side, basting regularly with the remaining marinade mix, or until the chicken is cooked through (this will depend on the thickness of your chicken).
- Slice the chicken and serve with the salad.
