Salt and Pepper Prawns with Sesame Salad
This delicious crowd pleaser is quick to knock up and is full of low calorie protein.

Ingredients
- 2 tbsp cornflour
- 1 tbsp sea salt
- 1 tbsp cracked black pepper
- 600g cocktail prawns, tail on
- 2 tbsp canola oil
- 150g bean sprouts
- 200g snowpeas, sliced on the diagonal
- 100g broccolini, halved
- 1 tbsp sesame oil
- 1 lime, juiced
- 1/4 cup fresh coriander
- 1 red chilli, finely sliced
- 1 spring onion, finely sliced
- 20g granulated nuts
Method
- Combine the cornflour, salt and pepper. Toss the prawns in the flour mixture.
- In a non-stick pan over high heat, add the oil and cook the prawns until they turn pink and flour coating begins to turn crisp and golden. Remove from pan.
- Add the brocollini, snow peas and beans sprouts and sesame oil to the pan. Stir-fry for 1-2 minutes or until the vegetables turn bright green. Squeeze over lime juice and top with coriander, spring onion, chilli and nuts. Serve with prawns.
