Pear and Hazelnut Pancakes

Ingredients
- 1 1/8 cup wholemeal flour
- 2 ½ tsp baking powder
- 1/8 tsp cinnamon
- 300g low fat Greek yoghurt
- 1 ½ cups skim milk
- 40g hazelnuts, chopped
- 2 tbsp maple syrup
- 1 firm pear, sliced
- 1 spray oil
Method
- Whisk the flour, baking powder and cinnamon together.
- Whisk the milk into the flour mix until all lumps are gone.
- Place a pan on a high heat and when hot place pear slices in the pan, lightly browning on each side.
- Turn the pan down to a medium heat and give the centre of the pan a very quick spray of oil then spoon or pour some mixture into the centre.
- When bubbles start to form and the underside is golden brown, flip the pancake and cook until golden. Repeat with remaining mix, only giving a short spray if pancakes stick.
- Throw the hazelnuts in around the last pancake to toast them lightly and when all pancakes are done, stack them up, top with pear, yoghurt and maple syrup.
