Pea and Ham Soup
A classic soup that can be enjoyed for lunch or dinner.

Ingredients
- 1 tbsp olive oil
- 2 celery stalks, finely chopped
- 2 medium carrots, diced
- 1 onion, diced
- 3 cloves garlic, crushed
- 1 1/3 cup green split peas, rinsed and drained
- 6 cups cold water
- 500g smoked ham hock
- 1 large sprig of rosemary
Method
- Heat oil in a saucepan over medium heat. Add celery, carrot, onion and garlic and cook for 5 minutes or until the onion softens.
- Add split peas, ham hock, rosemary and water. Bring to the boil, then reduce heat to medium-low and simmer, covered for 1 1/2-2 hours, or until the meat begins to fall from the bones.
- Remove rosemary and ham hocks and pull the meat from the bones. Chop meat and set aside.
- Using a stick blender, blend the soup mixture until smooth.
- Stir through the ham pieces and simmer on low for a further 5 minutes. Season to taste.
