Moroccan Lamb Stew
Lamb is packed with iron and this winter warmer is a great way to enjoy it!

Ingredients
- 400g Heartsmart lamb, diced
- 1/2 tbsp olive oil
- 1 onion, sliced
- 1 clove garlic, crushed
- 2 tsp Moroccan seasoning
- 1 cinnamon stick
- 1 tsp ground cardamom
- 400 g pumpkin, roughly chopped into
- 500ml chicken stock
- 1 tbsp honey
- 1 x 400g chick peas
- 40g raisin
- 1/4 cup fresh coriander leaves
Method
- Heat the oil in a deep saucepan over medium heat.
- Add the onion and garlic and cook 3-4 minutes, stirring regularly, until onion begins to soften. Add the Moroccan seasoning, cinnamon and cardamon and stir until fragrant. Add the lamb and cook until it begins to brown.
- Stir through the pumpkin, then add the stock, honey, chickpeas and raisins. Cover and simmer on low for 20 minutes or until the pumpkin is soft and lamb is cooked through.
- Stir through coriander before serving.
