Middle Eastern Broccollini Salad with Grilled Chicken

Ingredients
- 400g chicken breast, thinly sliced
- 80g haloumi cheese, cut into slices
- 1/2 of a 400g tin lentils
- 1/4 spring onions, thinly sliced
- 250g cherry tomatoes, halved
- 1 bunch broccolini (200g)
- 175g mini capsicum, roughly chopped
- 4 radishes, thinly sliced
- 1/4 cup fresh mint leaves
- 200g cucumber, chopped
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 2 tsp lemon juice
Method
- Place broccolini into a bowl of boiling water for two minutes or until it turns a bright shade of green and becomes slightly tender.
- Combine lentils, spring onions, cherry tomatoes, broccolini, mini capsicums, radishes, cucumber and mint.
- In a small bowl, combine olive oil, smoked paprika and lemon juice. Pour over salad.
- In a non-stick frypan over high heat, fry the chicken for approximately two minutes on each side or until cooked through. Season well. Add the haloumi to the pan and cook for a minute on each side until it turns slightly golden.
