Kangaroo Capsicums
Tasty and fun to serve up. Mix in about 2 cups of cooked brown rice for the rest of the family.

Ingredients
- 4 red capsicums (600g)
- 1 large carrot (100g), finely sliced
- 80g red cabbage, sliced
- 80g cabbage, sliced
- 400g kangaroo mince
- 1 tbsp Cajun seasoning
- 1 tbsp Worcestershire sauce
- ½ cup beef stock
- 100g light cheese, grated
Method
- Pre-heat oven to 180oC and heat a non-stick pan over a medium-high heat.
- Soften the carrot and cabbage in the pan then add the mince until brown.
- Add the seasoning and sauce and cook for 30 seconds then add the rice and cook for a minute further.
- Add the stock and cook until the sauce has reduced and thickened a little.
- Cut the tops off the capsicums and take out the centres and fill with mince mix.
- Top with cheese and bake in the oven until cheese has melted.
