Honey Pork Rice Paper Rolls

Ingredients
- 400g heart smart pork cut into strips
- 1 tbsp honey
- 1 tbsp kecap manis
- ½ head pak choi
- 90g snow peas, sliced into strips
- 1 capsicum sliced into strips
- 12 rice paper wrappers
- 5 mint leaves, chopped
- ½ cup coriander leaves, chopped
- Juice of 1 lime
- 1 tbsp fish sauce
- 2 tbsp sweet chilli sauce
Method
- Combine pork, honey and kecap manis and allow to marinate for at least half an hour, then stir fry the pork and remove from the pan.
- In a separate dipping bowl combine ½ the coriander, lime, fish sauce and sweet chilli.
- One at a time, make the rice paper rolls by soaking the wrapper in room temperature water until just soft, laying out on a damp tea towel, filling with remaining ingredients and rolling up making sure to fold the ends over and tuck them in half way through rolling.
