Cajun Prawn Skewers with Charred Corn and Capsicum Salsa

Ingredients
- 400g raw prawns, tail-on
- 1 tsp Cajun seasoning
- 4 corn cobs
- 1 red capsicum, cut into large pieces to roast
- 4 radishes, thinly sliced
- 4 spring onions, thinly sliced on a diagonal
- ¼ cup lime juice
- 1 clove garlic
- ¼ cup fresh coriander
- ¼ cup parsley
- 30g roasted almonds
Method
- Cook the corn in boiling water or microwave for 6-8 minutes or until it starts to become tender. Remove from water.
- Toss prawns in Cajun seasoning and place on skewers.
- Combine the lime juice and garlic to make a dressing.
- Place the corn and capsicum, skin-side down, on a hot grill or barbeque until capsicum skin begins to blister. Remove from heat. Turn corn and continue to cook until tender and char marks have appeared.
- Cut capsicum into chunks and corn from the cob. Combine with all ingredients except the prawns and toss.
- Cook the prawns on the barbeque or pan for 2-3 minutes on each side or until cooked through.
