Cajun Chicken with Salsa and Sweet Potato Mash

Ingredients
- 4x 100g chicken breast fillets
- 1 tbsp Cajun seasoning
- 1 tbsp polenta
- 2 cobs (200g) corn
- ½ cup coriander leaves chopped
- 1 red chilli finely sliced
- 4 shallots, sliced
- 100g cherry tomatoes, quartered
- 2 limes, juiced
- 400g sweet potato, diced
- 1 tbsp sweet chilli sauce
Method
- Combine polenta and Cajun seasoning in a bowl.
- Place the chicken fillets on greaseproof paper and sprinkle with the Cajun mix. Fold over the greaseproof paper and beat with a meat mallet until fillets are even thickness.
- Cook corn, covered and with a little water, in the microwave for 3 minutes. Remove kernels from cobs and combine with coriander, chilli, shallots, cherry tomatoes and lime juice. Set salsa aside.
- Place sweet potato in a microwave safe bowl with a little water and cover and cook on high for 5-7 minutes or until potato is soft. Mash until smooth and stir in sweet chilli sauce.
- Take chicken out of the greaseproof paper and in a non-stick pan, cook chicken on a medium heat until cooked through, turning once.
- Serve chicken on a bed of mashed sweet potato with a side of salsa
