Guilt Free Ice Cream – Yes. It Exists.
It’s warming up and in this sort of weather who doesn’t enjoy a little scoop of ice cream after skipping across the hot sand from the beach? This will even please the kiddies and it is just as healthy as a piece of fruit!
Banana Ice Cream
- 1 or 2 large bananas
- Cinnamon (or mixed spice etc)
1. Peel and cut the banana (and/or mango) and freeze for at least 2hours. Overnight is best.
2. Once frozen add the fruit to a food processor and blend stopping to scrape down the sides often. It will get crumbly, then gooey but keep going and it will start to go fluffy and soft.
3. From here you can enjoy a nice Banana soft serve or put it back in the freezer and scoop it out later like regular ice cream!
